A few weeks before the harvest, the tea plants are shaded with light-blocking nets. As a result, they form more chlorophyll and amino acids – which gives matcha its deep green color and characteristic umami.\u003c\/p\u003e\n\u003cp\u003eAfter the harvest, the leaves are steamed, and the stems and leaf veins are removed. What remains is the leaf tissue, known as tencha (碾茶).
